SEPTEMBER ‘23: Silver State

This understated little gimlet has been getting a tonne of attention recently. When we first opened it was hardly ever ordered, but now it’s gaining cult status amongst Mezcal lovers, appreciated for its relaxed, aromatic, floral vibe. Its inspiration comes from a beautiful surrealist garden hidden deep in the rainforests of the Sierra Gorda mountains. The mezcal used comes from the same region.

“Las Pozas” was built by English artist Edwards James between 1949 and 1984 and is near the village of Xilitla, San Luis Potosí, a seven-hour drive north of Mexico City. This garden of otherworldly delights towers 2,000ft above sea level and resembles an ethereal, Escher-worthy collection of arches, pathways, and waterfalls surrounded by dense, ever-encroaching jungle. It’s weird and transportative, ancient, yet modern.

The mezcal from this region uses Salmiana agave which has an aroma reminiscent of eucalyptus, petrichor, and damp earth. We make a cordial from eucalyptus, cardamom, and chamomile, and cut the gimlet with a little dry vermouth to keep it light and bright.


TOMATO TOSTADA

AUGUST ‘23: Heritage Tomato Tostada, Pea Mole & Salsa Matcha.

Fresh on the menu at both sites this week. Isle of Wight tomatoes are absolute peak atm. Fresh English peas, mint, jalepeño, garlic & lime juice make up the mole with some punchy salsa matcha drizzled over. Order an EL PROFE from the menu to go with it. A heady & earthy mix of woodruff-infused Ilegal Mezcal, toasted pumpkin seed horchata, and coconut water.

The Madre family was assembled in 2019 by the people behind Belzan in Liverpool, and Breddos in London.

We wanted to bring home everything we learned about the food, drink, and hospitality of Mexico and share it with the UK. Our travels to Mexico City, Guadalajara, and Oaxaca have given us the most delicious food and drink experiences of our lives, now Madre can share them with you.
